It a a vibrant and less peppery radish that livens up any winter salad. I also used chioggia beets in the salad because they are just as flashy!
Watermelon Radish and Chioggia Beet Salad
1 large Watermelon Radish, sliced paper thin
1 small Chioggia Beet, sliced paper thin
2 stalks Celery, sliced thinly on the bias
2 cups Green Leaf Lettuce leaves
2 TBS Tahini
2 TBS Lemon Juice
2-3 TBS Olive Oil
1-2 tsp Chili Oil
a pinch of salt
1 TBS Black Sesame Seeds
Arrange the lettuce, celery, radish and beets on a platter or plates.
Mix the tahini, lemon juice, olive oil and chili oil together. Season with salt.
Drizzle over the salad and top with the sesame seeds.
Winter doesn't have to mean bland salads, not when you have wonderfully vibrant seasonal vegetables to add to it.
